The general movement towards dryer wines along with the custom of drinking Champagne as an aperitif, has generalized the consumption of brut. But many wine-lovers still enjoy the softness and the gentle reminder of past pleasures provided by a Demi-Sec, especially when served with a dessert. More than 55 crus make up the blend. Typically, Laurent-Perrier incorporates 10% to 20% of reserve wines into the blend, though some years this is higher. The second fermentation on its lees lasts at least three years. The dosage used is a liqueur made from sugar and wine from the same batch. Roughly 45 grams of this liqueur per liter are required. Its bright, shining color is a fairly deep golden hue. Its nose is intense, with a range of aromas, such as dried fruit, almonds and hazelnuts, with grilled and toasted hints. After a little aging, these will evolve to even deeper aromas of honey and pine resin. Vintage by Dom. Carneros from Carneros, California. The 2004 vintage was the earliest harvest in memory. The early spring was followed by nearly ideal ripening conditions and the crop was small, as were 2002 and 2003. The resulting Brut cuvee is one of Dom. Carneros' most fragrant vintages. The 2004 cuvee is composed of 61% Pinot Noir, 37% Chardonnay and 2% Pinot Blanc. Approximately 9% of the cuvee underwent malolactic fermentation prior to blending the cuvee for tirage bottling. The wine has been aged for three years prior to release and will further age gracefully in your cellar (if you can resist opening). This cuvee has wonderful fruit aromas of pears, baked apples and citrus peel enhanced with hints of caramel, spice. The wine is unusually round for its age, very mouth-filling and with a long creamy finish. Lovely served with double or triple cream cheeses, it also matches especially well with fish, shellfish, poultry and most Asian dishes.

Vintage by Pol Roger from Champagne, France. Pol Roger, one of a few luxury Champagne firms still family-owned, was established in Epernay in 1849. Pol Roger owns 200 acres of vineyards, which provide about 45% of their needs. Pol Roger's cellars extend over four miles of winding chalk passageways on two levels. The second or deeper cellar maintains a constant 9.5 C (50 F), one degree lower than the first level and most others in the region. This lower temperature slows the second fermentation, encouraging a finer mousse or bubbles. Pol Roger Champagne also spends two to three times the allowable minimum in the cellar before disgorgement, or about three years for the non-vintage and up to seven for the luxury cuvees. The long, slow maturation contributes greatly to the complex aromas, which distinguish these superb Champagnes. The Vintage Brut follows the traditional formula for Pol Roger Vintage, being composed of about 60% Pinot Noir and 40% Chardonnay drawn from 18 Grands and Premiers Crus. Bottled in a replica of a 17th Century bottle evoking the radiance of that period, Laurent-Perrier's prestige cuvees embody luxury, magnificence and elegance fit for a king. When it came to his prestige cuvee, Bernard de Nonancourt decided to highlight two of Champagne's traditional realms of proficiency: the blending of different crus and different vintages. Grand Siecle is the epitome of Champagne cuvees, as it blends complementary wines from Laurent-Perrier's very best growths and most successful vintage years. Grand Siecle is made with a pinot noir and chardonnay blend, with the latter being slightly dominant. Scharffenberger Brut is made from its own 120-acre vineyards in the Anderson Valley. In addition, Scharffenberger Cellars has long-term contracts with select vineyards in the greater Mendocino County. This type of vineyard selection allows us to choose from the best vineyards in the area which enables us to produce our trademark cuvee. The wine is two-thirds Pinot Noir which produces a red fruit (cherry and plum) forward nose combined with one-third Chardonnay which adds the tropical expression of litchi nut and mango. Ros? by Jansz from Australia. The Jansz Premium NV Rose is based upon Jansz wines of several vintages. Specially selected and crafted individual batches from cool climate locations in Tasmania, form this wine. Every site used to source grapes is specifically designated to growing fruit for sparkling wine. All batches are kept separate during winemaking to maximise blending options and the complexity of the final wines. The wine then goes through secondary fermentation in bottles and is aged on yeast lees for as long as possible with the average age of the final blend being 18 months to two years.
Vintage by Dom. Ste. Michelle from Columbia Valley, Washington. Luxe is a very delicate Blanc de Blancs sparkling wine crafted in the time-honored methode champenoise tradition. As in Champagne, only free run juice is used which results in extremely delicate flavors. For the 1999 vintage, juice was feremted in French oak after inoculation and aged for 12 months to build layers of flavor and creaminess. The second fermentation in the bottle lasted 20 weeks and then the wine was aged for 3.5 years for added complexity. Even in the glass this sparkling wine will tempt you - a beautiful very pale yellow sparkler with loads of tiny bubbles promises good things to come. Enticing aromas of grapefruit, lemon and pear fill the nose. On the palate tropical pineapple notes are complimented with subtle hints of ginger and a creamy soft mouthfeel. Vintage by Argyle from Willamette Valley, Oregon. What were you doing twelve years ago? We were picking the grapes that have become this sparkling wine. Since then it has been aging slowly on yeast in the bottle in our cool temperature warehouse. The color is a rich, youthful yellow. After ten years of waiting, the aromas are ready to punch out of the glass with a rich potpourri of wild ginger root, Gala apple, and a splash of nectarine, tangerine and mandarin! The flavor is extra creamy in texture. The bubbles are tiny and foamy. The fruit flavors of the aroma complex with pink pepper spice and baked filo dough yeastiness. Mouth-filling richness is translated into a very long and fresh finish. This wine will also age for quite some time on cork if cellared properly. The 1995 vintage in Oregon was a sparkling winemakers dream. Late ripening, of perfectly balanced sparkling wine grapes were unaffected by early rains. Everyone of the some 25 base wines we made in 1995 was a delight. The grapes for this wine were hand-picked into small baskets. They were then transported to the winery where they were chilled to 35 degrees F before being gently pressed. After several weeks of settling in tank, only the freshest heart juice was fermented using one of Argyle's proprietary yeast strains. A blend of 65% Chardonnay and 35% Pinot Noir and bottle aged on yeast for a decade, this ET retains the freshness of youth. An assemblage of 65% Chardonnay and 35% Pinot Noir, the 1995 Brut Extended Tirage is disgorged on demand. Its complex nose of minerals, toast, yeast, and dried honey is followed by a medium-bodied character of green apples, almonds, hazelnuts (or filberts as they're known in Oregon), and flowers. This outstanding sparkler has a wonderful balance, expressiveness and length. -Wine Advocate A lovely follow-up to the outstanding '94, this well-integrated, perfectly aged brut is still crisp and showing hints of fresh apple, along with beeswax, citrus and gooseberry.
Vintage by Roederer Estate from North Coast, California. A blend of 52% Chardonnay and 48% Pinot Noir. Fine tiny bubbles and a long lasting mousse are the usual footprints of the L'Ermitage cuvee. This cuvee from the palindromic vintage 2002 is showing great notes of tarte tatin: baked apples and buttery crust, with notes of apricot and delicate vanilla bean. The mouthfeel is creamy, expresses flavors of quince, and bread crust with a clean and crisp yet long finish.

Varieties like Pinot Noir, Gamay and Zinfandel give us light bright wines with high levels of acidity. The Sangiovese is more intensely aromatic, while the syrah contributes a deeper color and more tannin for body and richness.
