NOW ON SALE!! The Origins of Garagiste Wine What exactly is Garage wine? The term refers to great wines made in very meager facilities. And its not the winemaking facility but the commitment of the vintner that makes these wines so impressive. Jean-Luc Thunevin led the movement and by the 2000 vintage there were at least 25 of these wines being made in Saint-Emilion. Now they affect areas that were previously untouched such as the Graves and the Mdoc. 'This may be the biggest richest most intensely concentrated wine of the vintage in St.-Emilion (much like it was in 2000). Sadly there are only 900 cases of this unfined/unfiltered 85% Merlot / 15% Cabernet Sauvignon blend (made from yields of 23 hectoliters per hectare) most of which comes from 60-80-year old vines. Made in a huge nectar of the vine-like style it is incredibly pure and rich but is very uncompromising. It appears to be a modern day version of a wine made in the 1800s. Enormously concentrated massive on the palate with excruciatingly high levels of tannin but also high levels of extract it is meant for patient connoisseurs. It will have a fascinating evolution lasting 30-40 years but being conservative I will just say drink it between 2010-2025. Celebrating its 22nd year in 2008 Palmer Vineyards on the North Fork of New Yorks Long island has been called 'Long Island's most important winery.' The Reserve Chardonnay was produced with traditional Burgundian methods utilizing substantial new French oak for barrel fermentation then keeping the wine in contact with the yeast for the duration of barrel aging. Frequent stirring of these yeast lees along with malo-lactic fermentation helps soften the acidity as well as adding flavor and textural complexity. This is a very unique and rare wine. Davis Bynum has been producing exceptional Pinot Noirs both single vineyard and blends from the Russian River Valley since 1973 when they sourced from the famed Rochioli vineyard. Today more than thirty years later the tradition continues with beautiful hand crafted Pinot Noir from the valley's best vineyards. This wine is a blend of grapes from two vineyards; 58% Lindleys Knoll which is a hillside vineyard and 42% Moshin vineyard which lies on the benchland. The grapes were vinified separately and blended into a silky fruit laden wine with extraordinary finesse and style. Now with two years of bottle age it has softened and evolved into something complex and wonderful. Only 314 cases were produced so needless to say it is VERY LIMITED. Grab it!
When Duckhorn Vineyards produced their world class Pinot Noir Golden Eye Bruce Regalia did the honors as winemaker for seven vintages. Now this Pinot specialist has created another small lot gem J. Mauceri. His desire to add deeper layers of flavor to this wine took him into the Sonoma Coast appellation where the ocean-cooled climate allows pinot noir grapes to develop wonderful aromatics and deep flavors of dark cherry plum and blackberry. This high quality fruit was cold-soaked then slow fermented and aged in French oak. Its a ripe Pinot with sweetly focused cherry-berry flavors and tremendous depth. Only 250 cases of this Prestige Cuvee were produced. The 2005 vintage was a monumental success particularly in Burgundys Cotes de Nuits (WA rating 98). It is perhaps the best vintage in half a century. This wine was sourced from vineyards on the sloping hills surrounding the village of Gevrey-Chambertin where the deep rooted Pinot Noir vines average 35 years old. Cold macerated for 5 days and then fermented in stainless steel the wine was aged in oak barrels (45% new) for 13 months before bottling. Jean-Philippe Marchand only produces this wine in the best vintages. Ripe spicy Zinfandel from Sonoma has long been the standard bearer of that popular red grape and this one shows some real pedigree. In 2005 some of the top boutique Zinfandel wineries in Dry Creek Valley were dealt a severe blow by the inclement weather. Their loss was Telegraph Peak's gain. They sold off much of their wine to the winemakers there who blended it with some Napa Valley Petite Syrah and then aged it in American oak for added complexity and flavor. In the end we've got a a ripe tasty Zin that shows real character. The bright spicy berry fruit is a perfect match for everyday foods like burgers pizza or pasta.

Chateau Le Bon Pasteur is the home property of two of the world most talented and famous oenologists Michel and Dany Rolland. The Rollands client list reads like a Whos Who of Bordeaux Italy California and beyond. From Ornellaia to Harlan Estate to Chateau La Fleur de Gay and dozens more they are responsible for producing more great wine then perhaps any other couple in the world. The 16 acres of Le Bon Pasteur are ideally situated between LEvangile Gazin and Cheval-Blanc and have all the components of a top-quality vineyard. Its south-south-west facing with a good slope that assures excellent drainage. It has two different soil types one gravel-based and the other clay-based where are planted 80% Merlot and 20% Cabernet Franc. All of the vines are at least 30 years old. The Rollands winemaking philosophy includes late-picking for full grape development long maceration and the use of 100% new oak barrels every year. Robert Parker said of this wine: 'The 2004 is a top-flight effort nearly as good as the 2000 and 2001. Round ripe elegantly-styled 2004 Le Bon Pasteur exhibits notes of caramel mocha and sweet cherries and black currants. There is good size medium body tannin depth and a caressing sweetness/lushness. It should drink well for 10-15 years.'

The vineyard of Corton-Charlemagne is situated in the prime area of the hillside of Corton where its southeasterly aspect ensures maximum exposure to the sun. The fruit is harvested as late as possible to guarantee maximum ripeness. This Grand Cru wine has a citrus bouquet with a rich tropical fruit character. It is intensely powerful and fills the mouth with a multiplicity of flavours ending in a fine steely finish which lingers on the palate for minutes. This wine needs 4 to 5 years to open up and can age for up to 20 years. Barrel fermented with 100% malolactic fermentation 8 to 10 months ageing in new oak casks. The Corton-Charlemagne 2004 is a dazzling gold. The nose is loaded with intense aromas including candied bananas and subtle oak. A special cuvee of select Spanish grapes Macabeo Xarello and Parellada all grown in the famous Penedes region. Unlike many lower quality sparkling wines Pere Venture Brut Nature is produced in the painstaking champagne method. In this process the fermented wine is placed in the bottle along with a 'dose' of sugar and yeast. The dose creates a second fermentation which creates the bubbles. Each bottle must then be hand disgorged to removed the excess yeast in a labor intensive process. This method produces a silky supple and uniform effervescence that is well integrated with the delightful flavors that the wine exhibits. This is a deliciously dry and refreshing sparkling wine at a super price.

The 30 year old vines are carefully tended to produce low yields hence production is less than 1 500 cases of this Saint-Estephe Petite Chateau. 2003 was an excellent vintage with ample ripeness. The Blend is 50/50 Cabernet Sauvignon and Merlot all hand harvested and selected. Vinification is slow and temperature controlled. The grapes macerate and ferment over a total of about 4 weeks after which the wine is aged in oak barrels 25% new. We were particularly excited by the immediate charm of this wine. Deep almost black in color with a very rich and expressive nose of coffee and very ripe black fruits underplayed with distinctive vanillin-oak notes. On the palate the wine is round almost opulent well balanced and harmonious. Finding Saint-Estephe of this quality at this price is a near impossibility. This wine is truly an excellent value!

Junmai Dai-Ginjo is the highest quality grade of sake. At least 50% of the original rice grain is polished away to make Dai-Ginjo. This is also a Genshu which means it is not diluted and carries the full fermented strength of 19% alcohol (most sakes are diluted down to 15-16%). Fermented with natural spring water from the Kyoto region this is full flavored well balanced sake with a complex notes of anise and jasmine as well as a long lingering finish. A white-wine grape that is the sparkling wine of Italy. This cool climate vine is fairly hardly and productive requiring a long growing season. The medium-sized berries are spherical and golden-yellow in color with smooth dusky skins. The fruit is high in acid and low in alcohol and extract with soft aromas. Fifteen years ago he moved here from Bordeaux to serve on the production team of Dominus the Napa winery owned and operated by his fellow Bordelais the Moueix family of Chateau Petrus. Since then he has consulted for more than 15 California wineries including some of the most rarified names in the cult category with past clients including Lail Constant Caldwell and Seavey and current clients such as Bryant Family Vineyard 29 Marston Family and Dalla Valle and of course his own label Melka Wines. His 2005 CJ Melka is a blend of 83% Cabernet Sauvignon 9% Merlot 5% Cabernet Franc 3% Petit Verdot from prime Napa vineyards. Aged 19 months in 75% new French Oak barrels. Extrmeley rich and intense with blackberry cassis and vanilla. Beautifully balanced with firm tannins this wine will continue to evolve over the next 7-12 years.
This fine quality Junmai Sake is very unique. It is a Teru sake which means it is aged in Japanese cedar barrels giving it a uniquely spicy character aroma and flavor. It comes from the Saitama Region which is right outside of Tokyo and in fact this area is the largest agricultural plain in Japan. There rice is grown in abundance and with great care. This sake may be enjoyed chilled or warm and is the perfect complement to cedar plank- grilled salmon and many other savory dishes.
Tapestry Reserve was created so that Beaulieu Vineyards with their prime Napa Estate vineyard land and experienced winemaking team could produce a world class Caberent-based Bordeaux blend. The 2004 Tapestry is a blend of 80% Cabernet Sauvignon 13% Merlot 3% Cabernet Franc and 4% Petit Verdot. Grapes were hand picked at optimal maturity and crushed into stainless steel fermenting tanks. Fermentation lasted 7-10 days with peak juice temperatures reaching 85F. The must was gently pumped over/punched down 2-3 times per day to carefully extract aroma and flavor components. Pressed at dryness the individual vineyard lots were transferred to barrels for malolactic fermentation and extended aging. The wine is aged 21 months in French and American oak barrels 66% new.Classic black-ruby color typical of this blend. Ripe brambly coffee and black cherry aromas showcase the varietal while black olive and dark cocoa scents suggest the wines Rutherford origin. Medium full-body and firm structure dominant with the cherry-plum and herb Merlot adding nuance in the finish. The long growing season in Monterey allows the grapes to develop very mature ripe fruit flavors with refreshing acidity and perfect balance. This dense full-bodied muscular firmly tannic Pomerol should be cellared for 5-8 years and enjoyed over the following 10-20. This is clearly a property to watch now that it is in the hands of Catherine Pere-Verge who is intent on taking it to the summit of Pomerol. Aging gently in the Domaine's cellars for the last six years no expense was spared in producing it. The Les Chaume vineyard in the center of Vosne-Romanee is just to the south of the Grand Crus La Tache Romanee-Conti and Romanee-St.-Vivant. The vintage was exceptional for early warm weather that really jump-started the Pinot Noir development. Without any bad turns during the summer or fall the harvest was a tremendous success. Even with that Jean-Philippe practiced meticulous grape selection and produced a mere 600 bottles (50 cases). After a long maceration he aged the wine 18 months in French oak 50% new. Jonathan Maltus the dynamic producer of Le Dome is a Bordeaux newcomer who fervently believes that great terroir is essential to making great wine. The grapes for Le Dome come from his single vineyard on the hillside adjacent to Chateau LAngelus. The vines were planted in the 50s and undergo three green harvests to limit the already naturally low yields. Le Dome represents the highest manifestation of Cabernet Franc in any top level Bordeaux wine at 75%. Blended with 25% Merlot the hand selected grapes are double triaged before crushing. This special bottling is named after owner Dominique Haverlans son Benjamin who was born at the Vieux Chteau Gaubert in the Graves region of Bordeaux. This wine is a carefully made selection of 55% Merlot and 45% Cabernet Sauvignon. The fruit is hand-harvested and only the best grapes are used. The wine is aged one year in small barrels and then bottled unfiltered. Haverlan is the president of the Growers Association in Graves. In 1985 he began planting his vineyards very densely increasing the number of plants to ten thousand per hectare effectively lowering yields and increasing grape concentration. This wine shows velvety richness and deep flavors of olive tapenade cedar wood and black cherry.

Chateau La Dominique has attained cult wine status becuase of the tremendous quality improvements brought on by famed enologist Michel Rolland. Robert Parker said- 'The 1998 is a soft fat voluptuously-textured opulent effort with a dense ruby/purple color and gorgeous aromas of olives black cherry jam blackberries chocolate and espresso. This full-bodied wine is hedonistic flashy and nearly decadent in its display of luxurious fruit high glycerin and spice.' 86% Merlot 12% Cabernet Franc 2% Cabernet Sauvignon. Grapes are picked and then de-stemmed rinsed of any debris hand sorted on a table and dried before gentle pressing and fermentation. The wine undergoes the unique process espoused by famed enologist Michel Rolland of micro-oxygenation. This is where a fine stream of oxygen is carefully bubbled through the fermenting wine softening harsh tannins. It is aged 18 months in oak 70% new and fined with egg whites before bottling. Saladini Pilastri was the first winery in the Piceno area to achieve the prestigious Tre Bicchieri award from Italy's wine bible the Gambero Rosso. All the winemaking is overseen by famous enologist Alberto Antonini. All of the farming is done without the use of chemical fertilizers and the winery is recognized by the EU as organic. This makes for long roots extracting mineral nuances from the soil and producing naturally low yields. Grapes were hand harvested and destemmed. Maceration and fermentation took place over a 3-4 week period and then the wine was aged in oak barrels 15% new for 12-14 months. After aging the best barrels are selected for Haut Paulliac. The others are sold off as generic Pauillac keeping the production of this estate wine small and the quality very high. The wine is rich in color and bouquet and powerful in structure with classic cassis and mineral flavors. Enjoy it now and over the next 3-7 years.
