Red Wine by Ch. de la Chaize from Beaujolais, France - regions. This ruby-coloured wine is rich in fruit aromas. It is made exclusively out of Gamay, a black grape with a white juice. The vine harvest is handmade according to a very strict selection of the ground provenances. The grapes are carried into open vats not exceeding 1.5 tons of grapes, in order to avoid crushing, and then poured into stainless-steel vats. The semi - carbonic vinification lasts for 8 days until the wine reaches 12,5 degrees of alcool, all without neither pumping, nor bursting or picking off. Pressing is made made with a single pneumatic press. The Castle of Chaize is located on the mounts of the Beaujolais, between Macon and Villefranche-on-Saone, 40km north of Lyon, in the south of Burgundy. The 98 hectares vineyard all in the Brouilly appellation area, grows on granitic schists hills facing south-south-east and is the most important estate in Beaujolais. The castle was built into 1676 after the plans of the Versailles architect Jules-Hardouin Mansart for Fran ois of La Chaize d' Aix, the younger brother of the Rev Father de La Chaize, Confessor of King Louis XIV of France. The French Gardens have been designed by Le Notre, the garden architect of Versailles, have been listed in 1972 together with the castle and the wine-cellars as Historical Monuments.

This wine is something of a legend among wine geeks - try and bottle and you'll see why. Winemaker and grower Marc Ollivier takes his time to make his Muscadet. He hand harvests (a rarity in the region), uses natural yeasts, waits for the wine to finish fermentation, and bottles with a very light filtration. His Muscadet has a bright color; a slightly bubbly, round and supple mouthfeel with sound structure; and a clean and fruity finish. Clos des Briords is Marc's finest Muscadet. It comes from a single plot of 50-year old vines planted in schist (shale). Marc is the only grower in Muscadet who does not have a single clonal selection vine (commonly used toincrease yield) in his vineyards. He propagates vines from the bud wood of the existing ones. His wines are kept on the yeast twice as long as those of his neighbors. The resulting wine is an extraordinary Muscadet. This wine has citrus-lime and wet stone aromas. On the palate it has bracing lemon mineral flavors that keep on going.

The founding Archambault family arrived in the region in the 15th century, turning an abandoned cave-like quarry into a winery. The Cave de la Perriere provided an excellent venue for producing fresh, crisp Sancerre. The Domaine is now owned and managed by Jean-Louis Saget.
Red Wine by Dom. des Terres Dorees from Beaujolais, France - regions. This wine is produced from Jean-Paul's oldest vines, which have fewer, smaller grapes with a more concentrated flavor. He is able to harvest the grapes later because there is far less risk of rot, owing to the small bunches. The grapes are very ripe and have a high natural sugar level. The wine is vinified in traditional Burgundy methods. Ancien is a deeply colored wine with a bouquet of red fruit and very soft tannins. It can be drunk relatively young but is probably best at 2 to 3 years old. This is a wine well balanced with natural sugar and acidity.
White Wine by Dom. Schlumberger from Alsace, France. Product of a great year, this is a beautiful example of a high quality Riesling that is fruity, dry and robust. It will enhance all simply-prepared dishes and fish, as well as meat. It may easily be cellared three to four years, but is enjoyable now. Riesling, a dry yet lively wine with a racy acidity, is considered the noble grape of the Alsatian varietals. It is very different to its German counterpart and to the numerous Rieslings which are now appearing around the world. The Alsace Riesling is better known for the elegant balance of acidity and fruit. It is a late maturing varietal and continues to mature even at quite low temperatures with wonderful results when the vintage ends with a warm and sunny harvest month.

Rigorous parcel selection allowed us to produce a new blend that adheres to our highest quality standards. Despite a very hot 2003 vintage we've been able to keep the juice on skin contact in order to get as much fruit character as possible. The fermentation process was maintained at low temperatures (14 to 16 degrees Celsius) and no malolactic fermentation was permitted, to preserve the crisp character of the wine.
